Butcher and Singer: Stephen Starr’s Old-Hollywood Steakhouse

Named for the stock brokerage that once occupied its landmark home, Butcher and Singer trades in a different currency now: dry-aged beef, tableside theater and the plush romance of a 1940s Hollywood supper club. Of all Stephen Starr’s Philadelphia rooms, this is the one built most unapologetically for occasions.

The Story

The early-1900s building near Rittenhouse began as a national bank before becoming the Butcher and Singer brokerage house. In the 1990s the space gained fame as the seafood palace Striped Bass, which Starr later ran; in 2008 he transformed it into this steakhouse homage to the golden age. The bones remained grand — a twenty-eight-foot ceiling, parquet floors — and the crystal chandeliers came from Miami’s storied Fontainebleau hotel.

What to Order

The menu is a steak-and-chops classic played straight: dry-aged cuts with proper crust, traditional sides and seafood that honors the room’s Striped Bass past. Service keeps the old rituals alive, and dessert is the famous one — baked Alaska, flamed at the table, as retro and delightful as the decor. The bar’s classic cocktails, led by a serious martini, complete the period picture.

The Space

Deep leather banquettes, potted palms, dark wood and deliberately dim, dramatic lighting beneath that soaring ceiling. It is one of Philadelphia’s most transporting dining rooms — less a restaurant with a theme than a fully realized world.
